Strawberry Oat Bars
Everyone has been asking for my Strawberry Oat Bars recipe, so I just decided to post it in the forum for everyone to enjoy!
I found the original recipe for these bars several years ago and, just recently, revised the recipe to be as healthy as I could get it. If you can think of other ingredients to make it healthier, or, if you have any questions, please comment or personal message me!
**Strawberry Oat Bars**
-Ingredients-
1 cup (250 mL) all-purpose flour
3/4 cup (175 mL) quick-cooking rolled oats
3/4 cup (175 mL) packed brown sugar
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) baking soda
1/3 cup (75 mL) apple juice
1/4 cup (60 mL) vegetable oil
3/4 cup (175 mL) seedless strawberry jam
-Preparation-
1) In bowl, combine flour, rolled oats, brown sugar, cinnamon and soda. Drizzle with apple juice and oil; stir until crumbly.
2) Remove 1 cup (250 mL) of mixture; set aside.
3) Press remaining mixture into greased, foil-lined 9-inch (2.5 L) square cake pan. Spread with jam; sprinkle with (1 cup) reserved oat mixture.
4) Bake in 350°F (180°C) oven for 55-60 minutes or until golden and jam bubbles at edges. Let cool on rack.
5) Using foil, remove from pan; peel foil from sides and cut into bars. (Bars can be wrapped well and frozen for up to 2 weeks.)

Full recipe to be cut into 12 bars.

That's what I'm trying to come up with a replacement for. You can certainly reduce it a little, but you definitely need the moisture to hold the bars together. I'm actually curious if adding more apple juice to eliminate the oil would work?0 -
ya i usually replace oil with applesauce in all my recipes, so i was wondering if it would work too or it would be too moist then with the apple juice already in it?0

Exchange the vegetable oil for coconut oil, It has less trans fat; therefore it is healthier. Slight adjustment in the amount may be necessary, for it could make them to moist.0

Try baby food applesauce instead of oil altogether, it also has no added sugars.0

Cool, I'll have to try a few! I'm really just wondering if replacing the oil for more apple juice would work haha. I'll have to try it on my next batch to see! Let me know if anyone makes it with any of the suggestions!0

These sounds good. I think the main effect of replacing the oil with applesauce would be to make the bars stickier and more crumbly. They'd still probably taste good, though. I'd personally keep the oil for the better texture. For 12 bars, 1/4 cup of oil is only 1 tsp. per bar (about 33 calories).0 -

3/4 cup (175 mL) seedless strawberry jam

Ingredients
1 3/4 sticks salted butter, cut into pieces, plus more for greasing pan
1 1/2 cups all-purpose flour
1 1/2 cup oats
1 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
One 10 to 12-ounce jar strawberry preserves
Directions
Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.
Per serving: Calories: 177; Total Fat: 7 grams; Saturated Fat: 4 grams; Protein: 2 grams; Total carbohydrates: 28 grams; Sugar: 18 gram; Fiber: 1 gram; Cholesterol: 18 milligrams; Sodium: 72 milli
