Smokey Yam Salmon Chowder:
1/2 tbsp coconut oil (or other oil)
1 large yam, chopped(470g or so)
2 carrots, chopped
1 stalk celery, chopped
1/2 an onion, chopped
3 garlic cloves, pressed
1 can no salt or sugar added corn kernels
8oz cooked salmon (other fish or seafood works too)
1 can Evaporated fat free milk
~ 1 tbsp smokey hot paprika
pepper and onion powder to taste (optional)
Saute onion, carrots and celery in oil until onion is soft
Add garlic, then yam. Just cover with water and simmer until yam is soft
Once all vegetables are soft, turn off heat and puree in blender or with imersion blender.
Add chunked salmon, drained can of corn, evaporated milk and spices and stir.
Makes about 4 servings, 390 cal per serving, 154mg sodium.

Lazy Lentil Soup
1T olive oil
1 onion diced
3 carrots diced
2 celery stalks diced
2 t cumin
1/2 pound lentils
64 oz low/no sodium stock (chicken, beef, or veg)
2 c chopped kale
Cook onion, carrots and celery in olive oil about 5 minutes. Add cumin, lentils, stock and kale. Simmer until lentils are soft, about 45 minutes. If you like you can use an immersion blender to puree somewhat, or just leave it.0
