Protein Cupcakes

Recipe makes 6 cucpakes (one serving)

Ingredients:

¼ cup Egg Beaters all-natural egg whites
1 scoop Bluebonnet Chocolate Whey Protein Isolate
2 tbsp unsweetened almond milk
1 tsp ground cinnamon
1 tbsp whole ground flaxseed meal
¼ cup part-skim ricotta cheese
1 tbsp Hershey's natural unsweetened cocoa powder
4 pkts Splenda
½ very ripe banana, mashed

Preparation:
1. Preheat oven to 350 deg F.
2. Blend everything except the banana in a mixer.
3. Add the banana in and blend for 4-5 seconds.
4. Scoop batter into cupcake/muffin pan lined with cupcake/muffin cups.
5. Bake for 20 mins.
6. Let cool for 10 mins.
7. Eat your heart out and flex.

Carbs: 33 g
Protein: 38 g
Fiber: 7 g
Fat: 8 g
Sodium: 154 mg

    I think they might rise better if you put some baking soda in there too. :)

    I was thinking the same thing and this wouldn't change the calories I don't believe. The eggs should make it rise a bit.

    How would this taste without the ricotta cheese?

    In the first batch of these cupcakes, I had used unsweetened applesauce and no ricotta cheese. While edible, the texture was very runny and I didn't care for it.. I switched to ripe banana and added ricotta cheese primarily for texture and density and the cupcakes turned out a lot better.

    Re: the other question about using cottage cheese, I'm quite confident it will work out pretty well.

    I made a third batch of these muffins/cupcakes/whatever you wanna call them yesterday. Omitted the muffin liners and sprayed the pan with non-stick cooking spray. Blended the ripe banana with everything else at the same time. Muffins came out AWESOME. I mean they were "OMG, how can these taste so good and be under 400 calories for the entire lot?!" level of awesome. And the house smelled wonderful with cinnamon, chocolate and banana in the air. /faint

    Wonderful idea, thank you! I don't have baking instincts. I prefer to cook. So thank you for the suggestion of baking soda! :flowerforyou:
