Meals that are around 300-500 calories.

Hello MFP friends,

Lately I've been going off my calorie limit so much probably because of how much grains I've been consuming lately. If you guys have meal ideas that are around 300-500 calories please post it here. I'm not much of a cook but if it's pretty straight forward I'd be able to do it! Anything helps....

    Often use chicken as a base. Low in calories, high in nutrition (esp protein)… Add veggies and legumes or nuts… Try to avoid simple carbs, dressing (instead use herbs and spices).
  • I'm fond of mixing cantelope, blueberries, and cottage cheese at breakfast.

    I made this yesterday and have enough left over for tonight's dinner as well.
    It's really delicious and very low fat but has a good protein value. Give it a try;

    Mixed Vegetables;

    185g Chopped raw onion
    200g Chopped raw courgette (zucchini)
    160g Chopped raw bell pepper (any colour)
    190g Chopped raw tomato
    Satl/pepper/cumin/oregano/chilli flakes

    Put all the veg in a pan with just a little bit of water, add the seasoning and cook over a med/high heat, stirring to make sure nothing sticks to the pan.
    Take off the heat when it's done to your liking. I prefer mine to still have a bit of bite so it only took a couple of minutes.

    I served this with;

    Dry Fried Pork Liver;

    290g Diced pork liver (you can use lamb if preferred but it's double the fat and not as much protein)
    Salt/pepper/cumin/chilli flakes

    Marinate the liver in the spices for as little or as long as you can and then just simple tip into a faily hot pan and stir-fry for a couple of minutes.
    I stop while the liver is still quite rare because it carries on cooking in it's own heat and I still like it to be soft and 'creamy' rather than hard and tough.

    A half portion of the veg and half the liver contains; 257 cals, 5g fat, 1g sat'fat, 17g carbs, 34g protein, 5g fibre.

    I added a 10g sprinkling of spiced mixed seeds for an extra; 62 cals, 5g fat, 1g sat'fat, 2g carbs, 3g protein, 1g fibre.

    It was really filling, healthy and tasty. I can't wait for dinnertime tonight to come. :smile:
