Healthy Chicken Strips, with pic!

I made some chicken strips today, substituting flour or bread crumbs for healthy quinoa flakes! They are wonderfully delicious, crunchy, savory, and absolutely good for you! Btw, gluten and dairy free.

All you need is:
1 egg
1 tsp water
1/2 cup quinoa flakes
4 chicken tenderloins

Whisk your egg end water together, dunk your tenderloins in the egg wash, roll them in your quinoa flakes, place it on a baking rack on a baking sheet, season to taste, and bake for 20 mins at 375 F, serve with a salad or your favorite side dish.

    That sounds really good. I have a friend that has to eat gluten free and casein free too because she's a ciliac. This recipe just might give her a chance to cook something for herself that her husband will actually eat and enjoy too.

    I find them at our local grocery store, Kroger, in the organic section, they are by Ancient Harvest, most whole foods stores carry then also.

    That looks good. Where did you purchase Quinoa flakes? I love to make breaded chicken, and I have used regular bread crumbs or corn meal.

    I have also read that crushed up corn flakes cereal is also a good option to use in place of breaded seasoning.

    They crisp up really nice! I made them again last night, but I had to put them under the broiler for a sec to brown this time around, not sure why, I didnt change anything, so if you make them and they dont brown very well, try that.

    Half a cup of the crispy quinoa cereal i bought only has 130 calories, so 1/4 cup has 65, 1/4 c is 4 tablespoons, so roughly 16 cals a tablespoon. 80 cals in an egg so just see how much of the egg mix you end up using-if you used half then its 40 cals, ect. Cals in chicken are easy enough to find out on the net.

    So say (you'll need to add your own values for thechicken and how much egg you end up using, this is an example) you have four strips of chicken. Each strip is 50 cals. You dip each piece into the eggs and when youre done youve used half the eggs, so 40 cals, ten per chicken steip.

    Then each strip takes a tbs of quinoa.

    Strip-50
    Egg -10
    Quinoa-16

    Each strip would have 76 cals, or 304 cals for all four.
