Almost a whole container of Vanilla Coconut Milk!

I bought some Vanilla Coconut Milk at Trader Joes instead of my regular Almond Milk and it's yummy, but I have so much of it that I need to do something with it before it goes bad.
Anyone have some good ideas/recipes that you know of to use up my coconut milk?

I would freeze it as Popsicles
You could also freeze it in ice cube trays. You can use it with coffee to make ice coffe.
If it's frozen then it will keep for a long time0 -

I have learned to freeze everything. I love freezing extra coffee, skim milk, or almond milk, and then use it as the ice cubes for he keurig. It tastes almost the same as the iced coffee from keurig, but cheaper. This is because it won dilute it. Brew the coffee directly over the cubes, it works the best.
Oh, I also, add a shot of the sugar free syrup.... Mmmmm0 -
I bet that would taste great as part of a protein shake or smoothie, too.0

oh my gosh i put that stuff in everything. in coffee, mixed with ss/ff jello pudding mix and greek yogurt, on cereal, in smoothies (PB banana would go great with vanilla coconut milk), use it to cook oatmeal instead of boring old water, etc.0

add spices to it.. chicke/mushroom.. heat it up.. like a thai soup!?! coconut milk is a base for a lot ot thai foods.. YUMMMMM0
