Red Pepper, Spinach & Feta Quiche

Let me preface this by saying I have never made a quiche without a recipe before. I just sort of threw this together based off of other recipes I have used. I think it needs a little tweeking...probably a little bit more milk and a slightly shorter baking time. It tastes great, but I think it could have been a little fluffier! Please feel free to make comments on what might improve it!

I used a 9" store bought pie crust (the kind you roll out)
1 large red bell pepper, chopped
1 cup baby spinach
4 oz. feta cheese crumbles
5 large eggs
1/2 cup 2% milk
1/4 tsp. salt
1/2 tsp. pepper
1 tsp. extra virgin olive oil
1 Tbsp. minced garlic

1. Preheat oven to 375 degrees. Roll out pie crust into baking dish, put in freezer until everything is ready.
2. Heat olive oil in a pan over medium-high heat. Add garlic and red peppers. Saute until tender & add spinach. Saute for 1 more minute & set aside.
3. Add eggs & milk to a bowl, beat until mixed well. Add the feta cheese and salt & pepper. Mix again.
4. Put vegetable mixture into pie crust. Pour egg mixture over the vegetables. Bake for 35 to 40 minutes or until top is nice golden brown!

Serves 8

    If i were to do no crust would I change the amount of egg used?

    To those who mentioned making it without crust, you don't necessarily need to add more egg, but you could do that if you'd like. Just up the amount of milk!

    I think to make it fluffier you would use egg whites instead of whole eggs. But I've only made one quiche recipe ever, and it was an individual serving, so I could be way off, but I did use egg whites instead of whole eggs when I made it and it was fluffy.
