    Thank you! My dad is coming to install stairs this weekend and I wanted to bake something for him. After his quadruple bypass (high cholesterol and heart disease run strong in this family) he tries to stay below 9 grams of fat per day. Seriously. I'm always looking for fat-free desserts for him.

    ETA: Nevermind. I just remembered he's allergic to chocolate.

    I bet you could make them with splenda instead of sugar! My only problem....I don't think I could eat just one small square! Mine would be more like 4 small squares=1 brownie. And then I don't think I could eat only one of the bigger size brownie!!!:noway: :ohwell: :embarassed:

    Just had to add. I made these and they're great. More of a cakey texture than a chewy brownie but for the calories, it's worth it. I used 2 zucchini and half whole wheat flour/half white flour. I'll do all whole wheat next time.
    Remember to mostly drain the zucchini. The batter seems way too dry at first but gets wet very quickly. They were moist enough. If I hadn't drained the zucchini at all they would have been soggy.

    These are yummy and taste a little more like chocolate if you have semi sweet chocolate chips. I added 1/3 cup to this recipe and made them good, but there is fat in chocolate chips. Not sure what the nutrition with the chips are added, but not that bad given 1/3 cup to the total recipe. My brownies I put in muffin tins so, I got 22 instead of the 40, so my calories are a little more. It still satisfies your sweet tooth and healthy!

    Ingredients

    1/2 C Applesauce
    1 1/2 C white sugar
    2 t vanilla extract
    2 C all purpose flour
    1/2 C unsweetened cocoa powder
    1 1/2 t baking soda
    1 t salt
    2 C shredded zucchini
    1/2 C chopped walnuts (optional, not included in nutritional analysis)

    Directions
    Preheat oven to 350 degrees. Spray a 9 x 13 pan with nonstick spray.
    In a large bowl, mix together the applesauce, sugar, and vanilla until blended. In another bowl, combine the flour, cocoa, baking soda and salt. Stir the dry ingredients into the wet ingredients. Fold in the zucchini and nuts, if using. Batter will appear dry, but will moisten with the zucchini.
    Spread ino the prepared pan.
    Bake for 25-30 minutes, until brownies spring back, and tester comes out dry.

    Sprinkle with powdered sugar just before serving if desired.

    Makes 40 small (1 1/2 inch) brownies.
