Dinner Ideas

I'm a pro at making breakfast, and lunch is easy, but I need dinner ideas!! I'm used to making "kid food" like Mac n Cheese and casseroles and fattening yuck. I need help! A simple piece of meat and a veggie or two sounds so boring. Any suggestions?

Spaghetti Squash with Grilled Chicken is a veggie dish that feels like pasta. That's my go-to dinner for low cal, and you can put anything on it and it will taste good (curry, tomato sauce, pesto, chili powder, etc) And, it's super easy to make.0

Shepard's Pie! I make mine crustless but that's just me. Bottom layers is ground turkey then a layer of veggies(peas and broccoli for me) then topped with mashed faux-tatoes. Whats great is that this freezes really well so you can make a ton of it ahead of time then just reheat as necessary
Lettuce wraps. cube some chicken marinate in soy sauce, Worcestershire, brown sugar and hot sauce (sriracha is amazing for this), then saute with water chestnuts and serve in a lettuce leaf.0 -
Have you checked out websites like skinnytaste? You can search by meat (chicken, beef, etc) or even crock pot recipes. Most of the recipes include vegetables. I don't like plain meat and veggies either, I like to mix it up with stuff like shish kebabs, a side salad, or a cucumber tomato salad.0

We like to buy a lean pork tenderloin, place it in the crock pot, put saran wrap over it and slow cook it until it falls apart. You can then put it on a healthy bun option with a vinegar based bbq sauce. You get that great bar-be-que taste but from a lean cut of meat. We like to pair it with corn on the cob and white beans. We are very southern :happy: The beauty is the whole meal if you follow portion recommendations comes in at around 500 calories. It is also super easy. I put my white beans in one crock pot and the pork in the other. All I have to do is cook my corn on the cob and serve. Very yummy.0
