    Have done this many times but have just not added the lemon juice. Will try and probably will like even more. Way better roasted than any other way!

    I will try this. Sounds so good with the lemon.

    I am eating my roasted carrots (with a little garlic powder + EVOO) and zucchini (a little salt and pepper + EVOO) with my lunches this week. I roasted my veggies last Sunday (like a previous poster) and they are still good. I usually eat them all up by Wednesday. They are like little veggie french fries, but even better than french fries because they are sweet and salty!

    yum! I roast pretty much any vegetable. Makes them so sweet! If you haven't tried beets, cherry tomatoes, or turnips (great french fry sub), you should. :) I bought a Misto, and spray my olive oil, really cuts back on the calories. So worth the $10. I grill in the summer, but roast in the winter.

    I always roast my broccoli. Zucchini is my favorite...spritz just a hint of balsamic vinegar over it right after it comes out of the oven. its fantastic!!
