Crunch-Coated bananas

1/3 c. cornflakes, coarsley crushed
2 tbs. flaked coconut
2 tbs. vanilla fat-free yogurt
2 tbs. peanut butter
2 small bananas

1. In a small skillet combine cornflakes and coconut; cook and stir over medium heat for 2-3 minutes or until coconut starts to brown. Remove from heat. In a small bowl stir together yogurt and peanut butter; set aside.
2. Cut each banana into 6 1" pieces. Spread peanut butter mixture on banana pieces. Roll pieces in cornflake mixture. Serve immediately.

About 78 cal., 2g fat, 0 cholesterol, 45mg sodium, 11g carb, 1 fiber, 2 protein.
Serving size is 2 pieces of bananas.

My 14yo daughter made these over the weekend from a recipe out of the Better Homes & Gardens "ultimate low-calorie cookbook" We have tried several recipes from this book and have loved each one.

    Sounds good... but a bit high calorie for 2" of banana!
