rushed for time.. do you microwave your eggs?

I've never done it, nor did my parents.. we've always cooked them up in a pan... but sometimes i don't have that 10 minutes because i woke up late, and I know if I don't start with breakfast at home, my day will be out of control..

how do you do it? do you recommend it? how long ? recipes? anyone?

this morning I was in a rush so I had microwaved eggs with low sodium ham and a wedge of laughing cow cheese.

Spray the dish you are using to microwave the eggs in with cooking spray, add whatever you want and microwave. If I use two eggs I usually microwave mine for 1:40-2:00 mins stop and stir half way.
  • All the time! If I want it plain, I break 2-3 eggs and put them in a round bowl and microwave usually between 1.5-2 minutes on high. I then sprinkle on cheese or put it on whole wheat toast, etc. I also love mixing in salsa with the raw eggs and then microwaving it. Adds vegetables and flavor with very little calories added!

at work I do but at home I cook them in the pan.

When I cook them in the micro, its for about a minute and a half ...then i take it out, give it a stir and see if it needs more time. If so, then for 30 seconds.
  • I love microwave eggs. I have a silicone steamer with a lid (prevents explosions) that I cook them in. Long live rubber textured eggs~!!!

Yes, my parents worked so I had to do my own breakfast as a kid. Spray bowl with non stick cooking spray. Scramble the eggs in the bowl. Heat. Eat.

Yuck, can't stand the texture in the microwave. I have made soft boiled eggs in the coffee pot at work though. If I know I am going to have a rough week, I usually have a few hard boiled eggs in the fridge just in case.

Yeah, I can scramble them country style (stir them around without beating them first) in a pan faster than micro-wave and the quality is much better. Nothing against microwaves, just certain foods are better in my opinion.

We microwave eggs at my work for breakfast sandwiches, we usually just stick them in a microwaveable dish (at home I use a regular bowl), stir them up a bit and microwave until there isn't any gooey bits.

I don't microwave them, but I can fry an egg in about 2 minutes, and scramble them in about 5. I don't find the microwave a big time saver.

I have a microwave egg cooker that cooks 2 eggs separately and I keep it at work because that's where I eat my "real" breakfast.
  • Check out www.hungry-girl.com. She offers several recipes of what she lovingly calls "egg mugs." They are all made in the microwave. I've microwaved egg substitute a lot and it usually turns out pretty decent.

You can do amazing things in a Ziploc Bag. And the Steamer Bags are awesome.

  • Ive taught my kids on how to cook eggs in microwave. They will usually have 2-3 eggs and cook it in a coffee mug! They add cheese and ham, and salt and pepper. You must spray it cooking spray first.
Ive been adding sofrito, crushed red pepper flakes and sometimes a tsp of light sour cream to help fluff them up. Along with onion and lots of green peppers.

No, I'll take the 10 min, but it doesnt take that long. Microwave makes them rubbery
  • I too have a microwave egg cooker. It takes just about 1 minute. I love it when I have no time in the mornings.

I scramble mine with a little water, pepper, and Parmesan cheese.(You can add salsa, any cheese, any veggies, or ham if you like.) Microwave about a minute with a stir at 30 seconds. I also poach eggs in the microwave. Heat a small amount of water for 1 minute, drop egg in, pierce the yolk, cover bowl with a saucer, microwave for 30 seconds to 1 minute depending on the microwave. (My new one is twice as fast as the old.) Pour off the water. I use a slotted spoon. Julia Child always put her poached eggs on a dish towel to get them really dry. Paper towels work too.

I found this receipt on MFP. I usually have breakfast at work and these do the trick. I added mushrooms and a few black olives to the batch I made:

I make these and freeze them in freezer bags 2 in each. takes only a minute to nuke them and away you go!

    1 onion
    1 green pepper
    4 cloves garlic
    1TBSP olive oil
1 cup frozen or fresh spinach
    12 eggs
1 cup fat reduced mozzarella cheese
    3 TBSP bacon bits

Chop garlic and saute in oil. In the meantime chop the spinach, onion and green pepper. When garlic starts to turn light brown add green pepper, onion and spinach. Cook til spinach is done. Set aside to cool.
In seperate bowl, whip eggs, cheese and bacon bits. when veggies cooled add them to this.
Mix together. Spoon into muffin tins sprayed with cooking spray.
Bake approx 20 mins in 350F preheated oven
    Makes 18

    Per serving
    103 cals
    2g carbs
    7g fat
    9g protein

When I don't have time to cook my eggs in the morning, I just don't eat any. Same for any other meal during the day.

Going a few hours with a few hundred fewer calories is not a problem (and may even be healthy).
  • I have done it but I am not super thrilled with the texture...
Sometimes I'll cook them in a pan the night before and just warm them in the microwave the next morning. I also keep hard boiled eggs on hand in the fridge for emergencies.

I used to always use a pan but then someone (on here actually) told me a fast way to make scrambled eggs-take some cheese (I use laughing cow wedges) and eggs and put them in the microwave in a cup for 60 seconds. Very yummy and done fast!

scramble, put in ceramic bowl, hit the one minute quickset, consume. I usually put mine on a bagel thin with a slice of cheese.

If you dont want to scramble them and want sunny side..spray the microwaveable container, crack the egg, with a fork carefully poke the yolk twice in intersecting lines (it prevents the yolk from exploding) and the microwave at 60-70% heat for 45 seconds or longer depending on consistency desired.

I hardboil a dozen every Sunday and then if I don't have time to cook in the morning I just eat one of those. My kids like them too.
