Baked Oatmeal?

I'm not a cooked oatmeal fan..but love oats. I've heard baked oatmeal isn't as mushy..and I could add a bit of milk. Thoughts? Has anyone made it, if so did you like it?

Also, anyone have any low cal recipe for it?

    Sounds like a question for Google. I'll bet there are lots of low-cal low sugar bar type cookie things out there. Lots of added fruit- nuts- flax- chia- whatever and on and on and on.

    3 cups rolled oats
    1 cup brown sugar
    2 teaspoons ground cinnamon
    2 teaspoons baking powder
    1 teaspoon salt
    1 cup milk
    2 eggs
    1/2 cup melted butter
    2 teaspoons vanilla extract
    3/4 cup dried cranberries


    Directions:



    1.Preheat oven to 350 degrees F (175 degrees C).

    2.In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.

    3.Bake in preheated oven for 40 minutes

    I love baked oatmeal. I use chocolate-covered katie's recipe but edit it a little. Plus, I love her recipes except she adds extras and does not count them into her calorie count, and mine are always over a lot from hers. She'll say, 1-2 Tbs peanut butter, well, that is 100 calories right there. Anyway, here is how I make it. I call it bressert, cause it is good anytime from breakfast to dessert. Eating it ATM, for brunch.

    mix and put in ramakin, bake 375 for 20 mins, broil for a few to brown top.
