Ummm, yummy but I think I might instead use a little Truvia and cinnamon for seasoning. Since my husband has tons of zuc's coming out of the garden, all I need is the carrots (I usually have egg beaters on hand and baby carrots for that matter). yummy...I just LOVE zucchini; this will make me feel like I'm getting zucchini bread without all the calories.
