    ..." 3 medium zucchini..."

what do you consider medium? I am orginally from maine where they Zucchini grow huge and in south Carolina they are very small. I got some that would be small in Maine standards but the cashier was shocked they were so "huge" I laughed!

so... what is medium for this recipe?

I would figure about 8 inches or so, and about 5 - 6 inches around. They would not sit horizontally in the produce bag from Sprouts. If you want to see a picture - not of the ones I used for the pancakes, but another recipe, go to My Fitness Pal Blog - http://www.myfitnesspal.com/blog/nortx and cursor down to the Zucchini Ribbon recipe.

When I shredded them in the food processor, they took up about half of the processor bowl. I let them drain in my small OXO food spinner (Which I use for mixing, draining, everything). Next time I buy some, I will measure them. This was a good point you brought up.. Thanks for the question and suggestion.

Here in Texas.. you know... everything is bigger.

Mmmm - sounds just like my mom's zucchini fritters, just with added carrots.

I love them - and for 17 calories I definately gotta make some!
