i made something similar with just zucchini recently and were nastiness incarnate. they had this tang to them ... i don't know why.. ugh.... but my zucchini bread today rocked. I wish i knew more about baking to cut back on the fat/calories...i;ve heard you can maybe substitute apple sauce for oil????

Yep you can substitute all or some oil in baking recipes with applesauce and it will typically turn out great :-) i used to make banana muffins that way.
