Lentil Recipes Please

I bought lentils for the first time at the store today and I don't know ANY recipes to cook them with. Help please!

    I tweak it a little bit by using 6 cups chicken broth instead of 2 cubes vegetable bouillon & 4 cups water, and I use turkey smoked sausage instead of veggie sausage. It's really good and very filling.

    I don't bother with the cinnamon, pinenuts or cayenne but the cumin and carmelized onions are necessary. Also, it can be served with Greek yogurt or regular plain lowfat yogurt.

    I'm Indian, so I grew up eating my mom's Indian "dal," which is basically the Hindi word for "lentil soup."
    Here are some great recipes, in which "dal" or "daal" in the ingredients list is "lentil."
    For reference: "urad" is yellow lentil and "masoor" is black/brown lentil.

    Lentils are one of my favorites! I like to put them in samosas, which aren't exactly diet food, but here's another one of my favorites: http://allrecipes.com/recipe/turkish-red-lentil-soup-with-mint/detail.aspx It calls for red lentils, but brown or green lentils will do the job just fine. Also check out Binnur's Turkish Cookbook at www.turkishcookbook.com. She has a million uses for lentils. Good luck!

    My favourite is something I've done myself - no recipe, I make it about once a month and we take it for lunch for a few days:
    2 cups green lentils
    2 cups chicken or veggie broth
    2 cups water
    1 medium onion, chopped
    4 garlic cloves, pressed (more like 6/7 - I LOVE garlic)
    3 large carrots, peeled, sliced and chopped
    3 stalks of celery, chopped

    2 chicken breasts, 3 sausages, or adjust accordingly

    Saute carrots, onions, celery and garlic in olive oil over low-medium heat for 5-10 minutes, until softened (my husband enjoys it when there is bacon in this step but I usually leave it out).
    You can then either add the lentils and water/broth to the same pot, bring to a boil, and then let simmer over low heat for an hour or two, adding pepper to taste OR combine everything in a slow cooker for 4-5 hours (high) or 6-8 hours (low). You may need to adjust the water depending on cooking method, but this generally works for me!
    I then bake a few chicken breasts and sausages to be added (chicken for me, sausage for him). You could add the sausage to the carrots, onions, etc at the beginning and cook it all together as well.

    This is enough for four lunches for my husband and I. Would feed four people dinner or 6-8 people as a side dish.

  • 1 cup green French lentils or small brown lentils
    3 cups water
    4 Tablespoons red wine vinegar
    4 Tablespoons extra virgin olive oil
    1/2 teaspoon salt
    1 teaspoon ground black pepper
    1 6.5 oz. jar marinated artichokes, drained and diced
    1 cup halved grape tomatoes
    30 slices low-fat turkey pepperoni, cut into a fine julienne
    6 oz. cleaned baby spinach

    Directions
    1. Combine lentils and water in a pot and bring to a boil over high heat. Reduce heat to a simmer and cook for about 30 minutes, or just until the lentils are soft. Remove from heat, drain well, pour into a flat dish and let cool.
    2. In a bowl, whisk together vinegar, olive oil, salt, and black pepper. Reserve.

    3. In a separate bowl, combine lentils, artichokes, grape tomatoes, pepperoni, and 3/4 of the vinaigrette.

    4. In another bowl, mix remaining vinaigrette with spinach and arugula.

    5. Place spinach in the center of each plate. Mound lentil salad in the middle of the plate and serve.
  • I put one bag of lentils in crockpot with 2 large cans of beef broth low sodium, I back of carrots, 5 tomatos cut up, 3 chopped jalapenos, 1 can of kidney or black beans 2 small chopped onions, and i cook about 2 cups of ground turkey, put a taco seasoning packet add garlic powder and pepper and let it cook for 6 hours on high! I like it to get kinda thick so thats why I cook for so long!

    I love this recipe!!!! It makes enough for lunches for almost a week. I double the garlic and add lots of cumin.

    If you make homemade stew or soups you can just add them in. They don't take too long to cook, like beans can.

    I usually cook green lentils and use them in other recipes.
    I will throw then in a salad with chopped bell peppers and goat cheese, or as a base with other veggies for a vegetarian shepherd's pie. Or for lentil tacos or sloppy lentil sandwiches (sloppy Lennys).
    I also use them to bulk up hamburger in tacos and chilis and sloppy Joes.
    Versatile little things!

    I have a taco seasoning mix (made of chili powder, cumin, paprika, coriander, cayenne pepper, onion powder) that I like to sprinkle heavily on them before cooking them in a rice cooker.

    I either have them as a sort of a taco salad or as a side when I season them.

    If you are not on a sodium restriction, they are good by themselves with just a splash of tamari. I like to cook them alongside quinoa because they have the same cook time.

    I like to make a curried lentil soup with veggies and then top with plain yogurt, mango chutney, and cilantro if I have it. Lentil soup also freezes great.

    Are they whole lentils or split lentils?

    For whole lentils, such as puy lentils I like the boil for 25-35 minutes with a whole bulb of garlic sliced in half through all the cloves (ie in the latitude direction) and a few sprigs of rosemary or thyme. Don't overcook, as they are nicest when still a little chewy. Drain, pull out the garlic and dress with vinegar and olive oil. Season with salt and pepper to taste.

    For split lentils, I typically make a simple soup. Brown some chopped onion in olive oil, and add some diced tomato (canned is fine). Toss in a few cups of water, a stock cube and one or two handfuls of lentils. Add mediterranean herbs to taste (dried oregno or thyme, for example). Done in about 25 minutes.
