  • I make these with egg whites, onion, bell pepper, and cheese. Reheat in the morning top with salsa yummy quick bfast

    Great idea, thanks for sharing. I've done something similar and used Quark instead of grated cheese to keep calories lower.

    I make these in a simpler and similar manner.

    Prepare ahead of time (or when making eggies). Slice 2 or 3 bacon rashers into small pieces. Brown in a pan. Drain off grease. Using same pan with bacon, saute some chopped white onion. Adjust for your taste.

    Place bacon/onion mix in bottom of sprayed muffing tin. Break one egg into muffin tin. Top with grated cheese.

    Bake at 350 until cheese is melted and egg is hard.

    This is especially good for brunch served with a mixed/spring mix green salad and a touch of raspberry vinaigrette.

    Yum! Always looking for make ahead foods! Do you freeze them?

    We haven't tried freezing them yet, since we just made them yesterday. But I'm sure they'll be eaten up fairly quickly, so not sure I'll have a chance! :) Let me know if you do and how it works out!

    When I make these, if there are any leftovers, I do freeze them and reheat from frozen in microwave. They are good as there is nothing in them that is not freezeable. However, since I make them using 1 egg per muffin tin per person, I hardly ever have leftovers. Count the people, how many they will eat, and start cracking the eggs!!
