Healthy General Tso's Chicken

I made this and it was delicious. I made a double recipe because we were two adults. DH had it with rice and I had it with roasted peppers and zucchini so these are the values WITHOUT rice or vegetables. I cut down the garlic because we can't do so much garlic. I used 2 lbs. of chicken breasts and Swanson regular chicken broth. This recipe is both gluten and dairy free using these ingredients in case anyone is on a restricted diet.
I must say, this is a wonderful recipe and it will definitely be a keeper.

These calculations were based on just under 2 pounds of frozen weight chicken. There was alot of chicken and we really chowed down and there was still lots left for my DH to take to work today. That sounds great, but that's a TON of sodium... I wonder if there are any lower sodium substitutes for the Soy sauce?0 -

I just checked the bottle again and I guess I chose the wrong one from the database. The La Choy Lite, has 15 calories and 550 mg per Tablespoon. I will post an ammended screenshot. Sorry everyone.

Oops... hope everyone saw that. I used the wrong soy sauce in my calculations from the database. The sodium content in La Choy Lite is 550 per Tablespoon and I used 4 Tablespoons = 2200 for two pounds of chicken with lots and lots of sauce. Here is an updated screenshot of the calculations.

for us lazies:
1/2 cup canned reduced-sodium chicken broth
1 tablespoon cornstarch
1 tablespoon sugar
1 tablespoon low sodium soy sauce
1/2 tablespoon white wine vinegar
1/4 teaspoon ground ginger
1 teaspoon peanut oil
1 medium scallions, chopped
1 medium garlic cloves, minced
1/4 teaspoon red pepper flakes or 1/2 dried chili, minced
1/2 lb uncooked boneless skinless chicken breast, cut into 2-inch pieces
1 cup cooked white rice, kept hot
Directions:
1 In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.
2 Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.
3 Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
4 Serve chicken and sauce over rice.
Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.
^^ This is how I make my General Tso's--except I usually use brown rice or quinoa and I add frozen broccoli and carrots near the end. My husband likes it too and he is hard to please when it comes to healthy eating.0 -
