Portobello mushroom lunch

:tongue: I do love cheese and this is my cheese fix for the day :tongue:

One portobello mushroom cap
- I let the cap soak in a mixture of sesame ginger dressing and light sodium soy sauce add water untill the cap is covered

Light string cheese and 2 table spoons of fat free cream cheese
-I mix them in a bowl and add spices (oregano, pepper, cayenne pepper... ect what ever I have in the house)

After the mushroom has soaked about 30 mins I stuff it with the cheese mixture.

Wrap in foil and bake at 350 for about 20 mins, or untill soft.

Next open the foil, add 1/4 slice of fresh bread crumbles on top of cheese.

Then set oven to broil to toast the top, only about 1 min though

Yummie cheese stuffed mushroom 180 calories and 5 grams of fat :heart: This is a variation of a much more un healthy mushroom I used to make :laugh: Sounds like alot of steps, but it's really not.

    side note: If you happen to be watching your sodium, this one is very high! I wouldn't eat it if you are getting ready for a weigh in :laugh: the sodium is 1291! You could cut 500 by not adding the soy sauce. I used lower sodium soy sauce with this. Just to let you know :ohwell: My food diary is public if you want to see all the details.

    I also added cottage cheese onion and one garlic clove :wink: Had to get it alittle more creamy.
  • This sounds really, really good - if you soaked the mushroom before, would make an easy breakfast!
