Would this wrap keep for lunch? And black beans...

I need to take something to school with me to eat in between class, and I came up with this:

Wheat tortilla
Black beans
Mozzarella cheese (or cheddar, depending on what I find at the store)
Shredded Lettuce
1/2 avacado

Would this keep for a few hours until I can eat it? There's a fridge I can store it in if I HAVE to, but I'd rather not.

Black beans: I don't have any experience cooking with these, I've just had them in pre-made wraps and burritos. Would they make my wrap soggy? And would I have to cook them before using? (I don't have time for that.)

Yeah, you should be fine. We take things backpacking that should probably be refridgerated, like cheese & hard boiled eggs. And we're still fine. ;)

Wrap it in aluminum foil though if you're really concerned. That will keep it cool.

The avocado would brown (it doesn't effect anything but the appearance) if you added some purple onion it would keep the avocado green, the only thing I would be concerned about would be the cheese if it sat out for more than 4 hours.

A squeese of lemon juice on the avocado will stop it from discolouring.

You could put everything but the avocado in a separate container then assemble when you are ready to eat
  • Pretty sure it would, just squeeze a little bit of lemon or lime juice on the avocado if you don't want it to brown.

And also... that sounds like a good lunch there :)

Get a small lunch bag with a freezer pack. Pack it all in there to keep cool until you eat. You can carry in your backpack or purse.

Black beans out of a can don't need to be cooked. Just make sure to drain them really well before you make your wrap so they don't make it soggy.

If you leave the lettuce leaves mostly whole, it can act as a "moisture barrier" between the beans and the wrap.
