    I really want to make this recipe for cottage cheese pancakes tomorrow morning:

    1/2 cup oatmeal
    1/2 cup cottage cheese
    4 egg whites
    1 tsp vanilla

    However, the recipe says to blend all the ingredients into a batter, but I don't want to wake everyone up in the morning with the blending blaring. Could I make the batter tonight and hold in the fridge until morning or will it turn funky?

    hmm sound interesting!!! im not big on cottage chese thought! but i like the oatmeal idea vs flour.. i may try that with my greek yogurt pancake recipe!

    Hi all! I made the pancakes Saturday.. super easy and I did end up blending all the ingredients together that morning. I was a little skeptical at first because the batter seemed a little thin and runny, but they turned out great! The recipe made 3 large , thin pancakes (I had no control over the size since the batter just kind of went where it wanted haha). Very delicious!! Plan on making a whole stack and eating them throughout the week.. yum yum!!!!

    The cottage cheese pancakes I make have quite a thick batter, might give your recipe a go as well

    Hmm, I may have to try these....

    I imagine blending it is just to smooth out the cottage cheese a bit. You could use a whisk and mix very well or just mix and leave it a bit clumpy.

    To clarify, are the oats regular whole rolled oats? Or, do you blitz them up first so they are more like flour?

  • Thanks for this recipe! I made them this morning and they turned out great. My wife did not like them, but I think it was because she knew there was cottage cheese in them. And to be honest, "cottage cheese pancakes"? But, they were very good. It's a great base to play with.
