Mini Cherry Cheesecake- 51 calories each
Found this recipe on Pintrest and I'm in love with it. It makes 64 mini cherry cheesecakes so you can portion control...if you don't eat 20 of them like I did :ohwell:

2 pkg. (8oz.) cream cheese, softened to room temperature (very important!)
3/4 cup sugar
3 eggs
1 Tbsp. vanilla
1 Tbsp. lemon juice
Bite size vanilla wafers
2″ aluminum mini baking cups
Cherry Pie Filling
Place a vanilla wafer in each mini baking cup. Mix softened cream cheese, sugar, eggs, vanilla and lemon juice till smooth. I put it all in a blender to get a really smooth consistency. Spoon approximately 3 Tbsp. of cream cheese mixture over each wafer. Bake at 350 for 15-20 minutes. Let cool and top with cherry pie filling. Refrigerate.
I plugged the info into MFP and got 51 calories a piece. You could probably reduce the calories even more using lite cream cheese and splenda but I was making them for a party and didn't want the taste to be off. They were sooo easy to make and sooooo good- they were gone in no time flat. Definitely a keeper!

I made similar without lemon,recipe by paula dean and half a cupof sugar is enough if you don't like them to be sugary.0 -
