Okay, I'm going to show my age when I ask this question. I see many "bump" replies to postings. What does "bump" mean? Please enlighten this soon to be 50-year-old!
Please correct me if I'm wrong, but I think it is when people want to move the topic to the top of the list (bump it up) but don't have anything specific to contribute.???

Okay, so I LOVE chicken salad. I try my best not to eat it due to the mounds of mayo and fat. I've even tried the low-fat mayo, but it's still not good for you. Yesterday I came across a no mayo recipe and was very skeptical. I had chicken in the fridge that had to be cooked so I tried it out. It was freaking amazing. I served mine on a whole wheat tortilla.
serves 3 (makes ~3 cups)
1 large chicken breast, cooked, cooled, and chopped
1/2 cup plain greek yogurt
2 Tbsp dijon mustard
1/2 lemon, juice
1/8 tsp dried dill weed
1 stick celery, diced
4 celery leaves (from the top of your celery stick), minced
2 Tbsp red onion, diced
1/2 cup apple, cut into chunks
1 heaping Tbsp raisins
6 walnuts, roughly chopped
8 grapes, sliced in half
In a large bowl, combine all ingredients. And done.
Be sure to let your chicken cool before mixing it all together. Enjoy!

Sounds delish! I LOVE chicken salad - have some for lunch today - I just boil chicken and then chop and add lite Hellman's with onion, etc. I've tried it with nonfat greek yogurt but found it too tart -- but am going to try this with the mustard and see if that helps.

Depending on who is eating it with me, I use 1/2 mayo and 1/2 plain greek yogurt when its for my husband and me. I add dried cranberries or golden raisins, and then add celery, some dried onions or chives, and pecans with a dash of celery salt and herbs d' province.
If its just me, i use Tzatziki sauce as the base to the chopped chicken, and add cranberries and slivered almonds or crushed pecans to the salad. Its really good and doesn't need much added to it. The Tzatziki sauce can get a bit watery if left over a few days tho, so its best in small batches.0 -
This sounds very good. I think I'll swap the raisins for chopped grapes though.
