Bhindi (spicy Okra curry)
Copy/Pasting from my cooking blog ( http://www.myfitnesspal.com/blog/taunto )where I share authentic Indian/Pakistani/Arabic recipes. Most of the recipes are handed down to me by Late mother, my sister or my sister in law. Hope you enjoy it!
Given to me by my Late mother. I would say this is a more Pakistani dish than any other country I can pin point. This is a very common and easy to make recipe for a rather humble looking veggie, Okra. Its delicious, its spicy but not too much. Its cheap, in cost and calories. Hope you guys enjoy it
Ingredients:
1 lb Okra (cut into 1/2 inch pieces)
2 onions (medium size) chopped
2 tomatoes (medium) finely sliced
4 tbsp olive oil
1/2 tsp red chilli pepper powder (or Cayenne powder if available)
1/2 tsp turmeric
Salt to taste
2-3 green chillies Optional (available in most indian stores for like 25 cents for a big handful)
Method:
In hot oil (I prefer olive oil), add onion and cook till it goes translucent (before it turns golden brow color)
On high heat, add Okra and fry it for 5 minutes till Okra seperates itself from each other (important step, Okra tastes weird if the Okra hair doesn't cook away). Add green chillies if you have them
Add red chilli pepper powder and turmeric powder. Add the tomatoes and salt. Cover up the pot, lower the heat and let the okra simmer for about 15-20 minutes. Increase heat back to high and str fry for another 5 minutes.
Enjoy your tasty okra with some flat bread

sounds delish!! i'm a huge okra fan, being from Texas and being Cajun it is something we grew up eating. I love pickled okra, stewed okra (just mainly stewed in tomatoes), fried okra (nom nom nom!!) and gumbo with okra :bigsmile:0

I love Okra and Arabic/middle eastern foods! I have tons of spices my ex fiance got when he was in Libya, I wish I new how to read arabic LOL and I could make more stuff. He did get me a ton of Tumeric from there I know that because it was supposed to be Saffron but he wasnt sure how to translate Saffron to Arabic oops now I have TONS of tumeric
I did learn how to cook alot of meals from him though wonderful spicy curry stuff YUM! never tried it with Okra though! I'm making this, thanks for the recipe!0 -
NICE, this is very similar to a Southern favorite (USA). It's the same except for the turmeric and cayenne.0

I love okra cooked in Pakistani style. It does not have to be very spicy. If eaten with typical roti bread it tastes so great. For added taste grinded mint in plain yogurt can be eaten as chatni Lovely dish and healthwise also very good..0

your recipe seems very fit to the genre of this forum. I have a very "unhealthy" yet very awesome addition to this recipe. That is to deep fry the okra till its crispy and then add to the masala onion and tomato curry. I know its taking it to a whole new level of unhealthy eating but this is one of my favourite recipes ever. I havent had this for atleast the past 7 months but it makes it so delicious just to have that spicy crispy bhindi (okra) with a fresh tandoor bread
and ofcourse an addition of chopped up green chillie!

2 cups of wheat flour (NOT all purpose flour). Add a pinch (or 2) of salt. Add little luke warm water to mix the flour. Mix it well. Little water goes a long ways. Mix the dough till its looking like those pizza dough balls you see on TV except this will be light brown in color.
Use some flour on the counter. Take a small piece of the dough you got in your hand and make it into a small ball. Dab some flour on it, use a rolling pin to stretch out the ball as thin as possible. Make sure to use dry flour on the dough often so it doesn't stick to the surface (and later to the pan)
On a dry, already heated frying pan, put the flat dough. Let it sit for about a minute (guesstimate, might be less or more). You're going for the color change in the bread. Once you see that the one side is cooked and see some black spots on it, turn it over, do the same to the other side except this time it should be lesser time. Toss the bread on to an open flame for 5 seconds each side so it has a bit of a burn on it.

Glad you enjoyed it. I personally donot like jalapeno in Indian foods (love them on other things though). The Indian green chillies have a different taste to it that they bring. Hard to explain for me lol. Its different flavors for me completely0 -
