    I'm having leftovers- Grilled ground sirloin burgers w/ bacon and honey goat cheese, lettuce and tomato, grilled zucchini, and homemade fro yo.

    I REFUSE TO GIVE UP ON SUMMER! :laugh:

    Probably veggie omlets with turkey sausage and whole wheat toast. Love breakfast for dinner! :) And amazingly our kids (3 & 6) will gobble this right up!

    Stir-Fry: Brown rice, broccoli, zuchini, red/orange/yellow bell peppers, califlower, onion and galic with a Black Bean Garlic & Mango Jam sauce - haven't done the cals yet but most of it will come from the rice, which is a good carb :-)

    Mince and apricot stuffed butternut squash, mine are veggie, but you can use meat mince. Followed by baked figs with honey and 0% fat Greek yoghurt.

    Oven "fried" chicken. I roll chicken tenders in panko bread crumbs and bake them. Comes out really crispy. My mate loves it.

    Marinated Portabella mushroom with shredded cheddar and pepperjack cheese (non-dairy)... and an Avocado/tomatoe salad :) Maybe some other veggies in there too for more substance... but the avocado puts me at my calorie goal :)
