I think that was the most filling lunch I have ever had!

Here was my lunch today. I am Thanksgiving dinner full right now!
Smashed Chickpea Wrap:

1 can garbanzo beans
1/2 Green Bell Pepper chopped
1 Green Onion
1 tbs (or more) Spicy Mustard
1 tps Sriracha
1/2 tsp Celery Seeds
1 Low-Cal tortilla

Smash the whole can of chickpeas, fold in all other ingredients. Salt and Pepper to taste. Wrap up in a tortilla. only about half the mixture will fit in a tortilla. I saved the other half for tomorrow and I am still bursting.

What is your best super filling meal?

  • Chunk white tuna
    1/2 tsp mayo w/ olive oil
    1/2 tsp spicy mustard
    1 tbs fresh tomato salsa
    1/2 hass avocado sliced
    sargento ultra thin provolone slice
    Sara Lee whole wheat bread 2 slices

    yum and perfectly filling!

    I love chickpeas. I'm so glad hummus is healthy (in moderation). I used to be a carrots and ranch junkie until I discovered hummus. Now I can almost make a meal out of carrots (or broccoli or celery etc) and hummus. I just add a little protein and voila.

    I'll have to try this though. I'll leave out the pepper since I'm not a fan, but everything else sounds wonderful.

    I threw it in becuase it was crunchy. Celery or even chopped up carrot would be yummy too
