15 Minute Chick Pea Curry
Hi, I made this yesterday and it was so delicious and so satisfying. I was stuffed afterwards!
The quantities below make 2 VERY generous portions at less than 300 calories. (*all given cals are approx)
I served the first portion with cous cous and the second I had for lunch today on its own. Cant wait to make it again
So, to make this you will need
1 Large Onion (41cals*)
1 teaspoon cinnamon
2 teaspoon garlic salt
2 teaspoon garam masala
1 teaspoon cayenne
1 teaspoon ginger
A little water to loosen
1 tin chick peas (400g 300cals*)
1 tin chopped tomatoes (400g 72cals*)
Handful sultanas (20g 59cals*)
Method
Roughly chop the onion and dry fry for a few minutes until translucent (you could use 1 cal spray).
Add dry spices to the onions. when the onions are coated with the spices, pour in 1/4 cup of cold water to loosen and to stop from sticking. Cook off the spices for approximately 2/3 mins. This will create a paste.
Add the tin of tomatoes, the drained chick peas and sultanas and cook for 10 mins, serve with cous cous or on its own.
Enjoy x

Add a touch of sugar if you think it needs it but the sultanas should be sweet enough.
