Eggs in Purgatory
Saw this on Nigellissima last night. Looks so amazing i'm gonna have it for my tea tonight!
In a small frying pan, gently sweat one garlic clove and some finely chopped red chilli in olive oil until soft.
Add one tin of chopped plum tomatoes.
Once the tomatoes are bubbling away, crack one egg into the centre.
Grate a small amount of parmasan on top, to taste.
Put a lid on, cook until egg is poached to your liking, serve with chunky wholemeal bread.
All for 300 or so calories, depending on how much bread you go for!

I do this for brunch sometimes but with leftover vegetarian chilli - put it all in a pan and make little holes to drop the eggs into, then serve over toast. I think it's something similar to Huevos Rancheros? Simply delicious.0

By the way, thank you for sharing the recipe.
I would probably make it with fresh sliced tomatoes instead of tinned and towards the end of cooking, throw in some flaked smoked fish (mackerel or haddock) and a couple of chopped spring onions for a bit of crunch.
