I still have a few cans of coconut milk left over from my bulk.
Does anyone have any recipes or links to share of food you enjoy with it?
Only one I have made is coconut curries!
I have calories to spare btw so that is not an issue

1 small ripe avocado, pitted, peeled, and sliced
3/4 cup plain nonfat yogurt
1/2 cup light coconut milk
3/4 cup lowfat milk
Pinch salt

I love to use it in smoothies.
I add a few handfuls of spinach or kale, a banana, ground flax seeds, whatever frozen fruit I have, and the coconut milk. It is so yummy! Usually I use half a can of coconut milk and the rest water. It is still nice and creamy!0 -
You can use it in soups. Butternut squash or pumpkin come to mind. You can google recipes.0

BTW: This is a popular drink in the Philippines and Brazil and lots of people will have their own family recipes. Obviously, you can substitute things like almond milk for the milk.etc. to your liking.0 -

I do make it myself!
I just do:
1 can coconut cream
1 cup milk or coconut milk
2 big ripe avocados
1/2 cup sugar
very simple and easy tastes good with a little lemon juice too!0 -
oh i just made fish in coconut sauce last night super yummy!
just any fish fillet or whole fish of your choice. Season and cook down in some cocot milk!0 -
Pumpkin and coconut soup?
Freeze it in an ice cube tray, then blitz in a blender with frozen banana chunks for an ice cream type treat?

Mark Sisson's Primal Blueprint Cookbook incorporates coconut milk into lots of recipes. The baked chocolate custard is great (I used half the maple syrup suggested).
It's apparently good in all kinds of cream/milk based soups. I don't eat much soup, but was thinking of trying cream of broccoli soup (coconut milk instead of milk/cream) and maybe cream of mushroom. I just used coconut milk in Chicken Fennel stew (also Mark Sisson) and it was delicious.
I use full fat coconut milk always. I've never had coconut cream but I've heard that there is sugar added.

Ingredients:
For the Frosting:
8 oz 1/3 less fat Philadelphia Cream Cheese (not fat free)
3/4 cup powdered sugar
2 tsp natural coconut extract
For the Cupcakes:
2 egg whites
1 cup canned light coconut milk (Thai Kitchen)
1/3 cup unsweetened apple sauce
2 tsp natural coconut extract
18.25 oz white box cake mix (Duncan Hines)
1/2 cup sweetened coconut flakes
72 Cadbury mini chocolate eggs (optional)
Directions:
In a medium bowl combine the cream cheese with the powdered sugar and coconut extract with a mixer. Keep refrigerated until ready to use.
Preheat oven to 350°. Line 24 cupcake tins with liners.
In a large bowl combine egg whites, coconut milk, apple sauce and remaining coconut extract. Mix well, then add cake mix and mix until combined.Pour batter into lined cupcake tins about halfway and bake 22-24 minutes, or until a toothpick inserted comes out clean. Let cupcakes cool to room temperature.
Top each cupcake with 1/2 tablespoon of cream cheese, then top each with 1 tsp coconut flakes. For an Easter theme top each cupcake with 3 mini chocolate eggs.0 -
