    A tiny bit off topic but replying to one of the comment. If you ever roast your turkey upside down, you will never do it the old way! I turn it over the last hour to brown.

    I make soup with almost exactly the same ingredients. Couple of hours in a big pot then remove the whole chicken. The meat falls off of the bone by this point. Strain all the stock into another pot and then return the meat to the stock, throw in some noodles and you have a great thai chicken broth.
    Add chillis and lemograss at the start to your own taste/preference.

    So funny! This is the ONLY way I'll make a whole chicken, and I bought one this week for that purpose.

    The last one I made cooked a little too long and it was so "falling off the bone" tender I had to use forks and take it out of the crock pot in pieces! Absolutely delicious!

    No need to - the crockpot seals all the juices in from the veggies and chicken (tip - -don't peek at it 20 times! Just put the lid on and let it cook). You end up with quite a bit of broth, actually. And it's super-juicy!

    I make this all the time! It really is the best too. The last hour I add a bag of frozen broccoli. Yummy. Its the only way my kids will eat broccoli.
