Cabbage and Potato Cakes...60 cals per cake and delish!
I thought I'd share my new found recipe which was delicious and only 60 calories per cake..(according to MFP after I entered the ingredients)...
Boil a few potatoes. Mash them up roughly (not so that they are too mushy though) and add a little salt and milk.
Equally boil some green savoy cabage (don't over do it - the recipe works best if the cabbage is a little crunchy still).
Drain the cabbage and whilst still warm mash in with the potato.
Add a chopped onion (I used a red onion for colour)
Add some sweetcorn and half a red chilli chopped up really small.
Mould the mixture into patties and bake in the oven at about 200C for about 40 mins (you could fry them but I wanted to make them as healthy as possible).
Serve with whatever you like or just eat them on their own with some soured cream for a healthy lunch.

KeithChanning, I checked the web for your British "BUBBLE AND SQUEAK CAKES" recipe which I learned to be England's version of the CABBAGE & POTATO CAKES.
