  • PUMPKIN PIE FILLING

    1 14 OZ CAN PLAIN PUMPKIN

    4 EGG WHITES (1/2 CUP)

    1 TSP VANILLA

    ¼-1/3 CUP SPLENDA or STEVIA… TO TASTE

    1 SCOOP VANILLA PROTEIN POWDER

    2 TSP CINNAMON, ½ TSP GROUND NUTMEG, ½ TSP GROUND GINGER

    BLEND TOGETHER WITH WHISK

    BASE: SPRAY THE PIE PAN WITH PAM, AND SPRINKLE EVENLY EITHER 1 OZ OF CRUSHED SHREDDED WHEAT, OR ¼ CUP OATS

    TOP: WHIP WITH MIXER 5 EGG WHITES, AND A TSP OF LEMON JUICE, AND :wink: STEVIA TO TASTE TO MAKE MERINGUE.

    Bake as you would a pie… 350 deg 40-45 minutes
    Final ten minutes, add whipped egg whites (meringue) and bake for 10 minutes longer.
