Spinach Salad with Orange Balsamic Dressing
This is so good and although the recipe if for four servings, you can eat the whole bowl for less than 200 calories.
Spinach Salad with Orange Balsamic Dressing
One, 6 oz package Baby Spinach leaves, rinsed and patted dry
3 T fresh OJ
1 tsp Balsamic vinegar
1 tsp Dijon mustard
1 T extra virgin olive oil
Salt to taste
Freshly cracked or coarsely ground black pepper corns
2 T sweetened dried cranberries (Optional)
In a small bowl whisk together OJ, vinegar, mustard and olive oil. Season with salt and pepper.
At serving time drizzle the dressing over the spinach leaves and toss lightly. Sprinkle cranberries on top.
Makes 4 servings
