Greek Chicken Pita Folds

Dinner tonight:

1 med onion, sliced
1 clove garlic, minced
1 lb. chicken breast or thighs (skinless, boneless)
11/2 tsp lemon pepper seasoning
1/2 tsp dried oregano
1/4 tsp ground allspice
4 pita bread
1/2 cup plain yogurt
1 tomato, sliced
1/2 med cucumber, chopped

In slow cooker, combine onion, garlic, chicken, lemon-pepper, oregano and allspice. Cover and cook on LOW for 4-6 hours.
About 10 mins before serving, heat pita bread as package directs. Meanwhile, remove chicken from slow cooker and shred. Stir yogurt in to onion mixture. Spoon chicken into pita. top with onion yogurt mix, tomato and cucumber.

Serves 4

  • Update: it did need a bit of salt. I just added a little to the yogurt sauce and it was great.

  • No, I didn't add any liquid. I would say that if you were leaving them in the crockpot for a long time to add a little bit of water or something because I had to turn my mine down to warm after a couple hours cuz they looked like they were drying out a little bit. But my crockpot is weird and cooks really high even when it's on low.
