    I'm making Lasagna tonight :)

Last night I breaded some chicken breast and had it with creamed spinach.
The night before I had BBQ pulled pork in the crock pot. (with lot's of leftovers)
Friday night I'm going to make Grilled Cajun Shrimp possibly.

Foil dinners over a camp fire. You can throw them on the grill too. Makes it easy and everyone can make their own the way they want it.

Do you have a grill? Tonight the boy and I are having steak tips that we marinated in BBQ sauce and grilled asparagus. The other night we had baked chicken parm (mine was light on the cheese!) and steamed green beans (he had pasta). Tomorrow we're doing homemade chicken soup.

I'm making spaghetti squash with sauteed spinach, shrimp, and light Ragu parmesan alfredo sauce. Probably have some cinnamon baked peaches with some vanilla yogurt for dessert too.
  • I'm making what's called a 'Hamburger Soup'
    - ground beef, chicken or turkey
    - low-sodium or reduced fat beef broth
    - peppers of all kinds
    - diced tomato

I add goat cheddar cheese on top however you can use low-fat or fat-free sliced cheese (used to have those, but can't have cow milk product) and for spicy add cayenne pepper :)

    Last night
Used a meat mallet to tenderize a 4 ounce pork tenderloin. Basted it with BBQ sauce and dredged through Shake and Bake for Pork. Calories: 460

    Lunch
4 oz chicken, with through a little Italian bread crumbs and Parmesan cheese. Baked for 20 minutes, removed and put marinara sauce and mozzarella cheese. Total calories: 390
  • Garlic and Rosemary marinated beef heart with rice. It's delish!
  • We are having the Soy Chcken cooked in the Crock Pot that was posted yesterday. It only took 5 minutes to throw together instead of Pineapple juice I added crushed pineapple with the juice. I am serving it over steamed Quinoa (I am going to use my Rice Cooker) so it is going to be a type of dinner that I am just measuring and adding ingredients and let the appliances do all the work.

Last night I used a recipe I found on this website by one of the users but tweeked it as my own. It's called Crock Pot Cheesy Chicken and Noodles. I mixed a can of Campbell's Healthy Request Mushroom soup and Campbell's Healthy Request Cheddar Cheese soup with one can of water and poured it over 14 ounces of frozen chicken breasts in the crock pot. Cooked on low for 6 hours. Then I boiled 3 servings of Barilla whole wheat penne pasta. Shredded the chicken in the crock pot and stirred in the pasta. Made 3 heaping servings which I think weighed around 275 g a piece and was 450 calories per serving. Tasted very similar to chicken and dumplings.
