122 calories a slice Pumpkin bread!

I made pumpkin pie on Thursday from REAL pumpkin... I ended up with extra puree so I made pumpkin bread. This bread has no eggs in it! Imagine that!!

Ingredients:

1 and 3/4 cup flour (I used all purpose)
1 cup packed dark brown sugar (I used golden brown)
1/3 cup white sugar (I used splenda)
1 cup pureed pumpkin
1/2 cup oil (I used unsweetened apple sauce)
1/3 cup milk (I used half milk, half apple cider)
1 teaspoon baking soda
1/2 teaspoon salt (I used 1/4)
1/2 teaspoon nutmeg (my nutmeg is old so I used 3/4)
3/4 teaspoon cinnamon

Put all the ing. together in a bowl as the recipe reads. Mix until completely combined!

Bake at 350 for 1 hour and 15 minutes. It's done when a toothpick is inserted and comes out clean. Let it rest in the pan for 10 minutes before turning it out to cool completely before cutting.

Isn't it pretty? I haven't tasted it yet, but it smells AMAZING!!

    (0.5 g fat, 12 g carbs, 7 g sugar, 5 g protein and 1 g fiber)

    -1 can pure pumpkin
    -1 can evaporated fat free milk
    -1/2 cup egg whites
    -1/2 cup stevia or other healthy sweetener
    -2 tsp pumpkin spice

    Bake at 350 degrees for 45 mins. Delicious hot or cold!!!

    sounds good! is the calorie information you gave for the original recipe, or for the substitutions you made? also, do you think it would work if splenda brown sugar was used?
