    I love "Cook Illustrated" squash soup. They do not discard the seeds but start with them! The curry variation topped with Cilantro and lime juice added to yogurt....YUMMY! Let me know if you have trouble when you Google it.

    Roasted Butternut squash (roast with Olive Oil, Salt, Pepper, Onion Powder, Garlic Powder and Cumin in 1/2 inch cubes)

    Serve with any sweetened nuts (candied walnuts or pecans or almonds) and any salty crumbly cheese, like feta.

    LOL Just searched google for this myself five minutes ago.

    I'm making a lamb stew and decided to just chop and peel it into 1/2 inch chunks and throw it in the stew...

    Will have to try some of these great recipes soon!
