So, I've got this idea - but I need your help!!! I'm lucky enough to have taken culinary classes in many countries, and eaten in many of the top restaurants in the world. The one thing they all have in common - they're not very healthy! So, I'd like to help some other people eat healthy - and take the guess work out of it.

I'm going to run Your Test Kitchen. I need ideas of your favorite things you just can't eat anymore because you're tracking your cals and the math just doesn't work. Let me know what you love, and I'll do my best to adapt the recipe to be something you could make on your own, and in a much healthier version. I'll take some pics (remember cooking and pictures aren't my profession, just a hobby), and detail the experiment, along with the final version and if I think it's worthy of re-creating.

Without your ideas, I've got nothing! Add me as a friend, submit your ideas, and I'll pick one at a time and get to work. Then watch my blog for my report and new creation.

    "Real" Pizza (Authentic Italian, NY Style and Chicago Deep) are actually some of my specialties...this may be very interesting!

    If it's a "specialty" like this one, they yes, please. Shoot it to me via a message. This is on the list! Think I'll compile 10 ideas or so at a time, and then ask for votes and go from that. (But this one gets my vote!)

    Yes authentic Chicago deep dish is my favorite. I'm from Chicago but live in Philly now and the pizza does not compare here. A somewhat healthy version of that or stuffed pizza would be great!

    Are you a fan of the classic spinach pie from I think Pizzeria Uno? Might be Geno's, not sure. But I've made that with great success on the 'not-so-healthy side of things. Thinking whole wheat crust, rolled considerably thinner to cut down on cals, upping the amount of light ricotta in the cheese blend, eliminating olive oil from the sauce...may be doable...but a challenge.

    Never had chicken spaghetti, but my friends mom makes a great cheese spaghetti! It's soo bad for you, but it's super cheesy and I love it haha!

  • My favorite foods that I have cut out of my diet are eggplant parmesan (especially on a sandwich) sooo bad for you!!

    I'm also a realllllyy big fan of Mexican! I LOVE sour cream & shredded cheese! With black beans, vegetarian soy meat, a little taco seasoning. All of that really unhealthy but delicious Mexican stuff!

    I hate to think of how many calories & how much sodium I used to eat when I was buying those taco kits.. like the double decker tacos.. A flour tortilla with some melted cheese around a hard shell taco, then with all that stuff inside! Don't even want to know how many calories I was eatting.

    But if you have some good recipes & ideas for healthier Mexican food, I'm definitely willing to try them!

    Geno's is really good but haven't had in a long while. Uno's is good but not as good as others, but I do like ones with spinach. My favorites were deep dish at Lou Malnatis and stuffed at Giordanos. I think your idea sounds delicious! Now I'm hungry, lol.
  • I miss Mexico! But I've started making quesadillas with lots of beans to cut down on the cheese inside :-)

    Things I miss that are unhealthy for me (and that I haven't found a suitable healthy recipe for):

    *Onion rings...ha, good luck, right?
    *Shepherd's pie (vegetarian...I have a good healthy recipe but it's awful as leftovers...gets too dry-ideas?)
    *Anything with alfredo sauce
    *Gooooooey brownies

    I do have an amazing recipe for organic homemade dark chocolate "thin mint girl scout cookies" if anyone is interested...

    Good luck with your recipes! Of things I listed, I'm mainly concerned about the brownies hehe

    fettuccine alfredo - I always use whole grain pasta, but the sauce alone kinda defeats the purpose of the whole grain pasta...haha.
