simple recipes that incorporate veggies??

im not much for cooking...i usually just steam frozen veggies and mix them with quinoa...what are some quick, easy, and healthy recipes?!

You could just stir fry some frozen peppers/onion blend and some mushrooms and put it in corn tortillas with some salsa and guacamole. Like easy veggie fajitas.0

I add zucchinni, green and red bell peppers to my easy spanish rice. Runs just under 200 calories for 1 cup serving.0

Steam fresh and puree/chop and add to spaghetti sauce. Use spaghetti squash for noodles and add broccoli, onions, etc. Use rutabaga or cauliflower instead of potatoes for mashed. Black bean cakes takes place of meat plus tastes great with just about any veggie. Mix up salads, add cabbage, cauliflower, etc.0

Drizzle some baby carrots with coconut oil and bake at 450 for 10 minutes, flip and bake another 10. They sweeten up like candy!
Roasting any vegetable brings out the natural sweetness and makes them super tender. Don't use olive oil though, it burns at pretty low temperatures.
You can also chop + sautee veggies with a bit of salt, pepper, and any other spices you want. Again, use coconut oil or some other oil that handles high heat well.
Slow cooker curries!
1-2 can coconut milk
1 onion, chopped
Curry powder + salt to taste
ANY other veggies!
Fill the slow cooker with the above and let cook overnight. I like it with cauliflower, zucchini, green beans, and peppers especially. The cauliflower gets super soft almost like rice and absorbs the coconut milk + curry powder. So good...
Never be afraid to experiment either! You'll learn more from trying something new and failing than you ever will from just following recipes blindly.
