yummy egg muffins

5 eggs
1/3 cup salsa
1 cup shredded cheese (i used mozerella, but you can use colby jack, cheddar, pepper jack, mexican blend, parmesan, etc)
1 yellow bell pepper
1 cup steamed broccoli florets
1cup steamed cauliflower florets
optional: onions, garlic, mushrooms (5-6 sliced), etc

pre-heat oven to 350.

steam broccoli and cauliflower, allow to cool.

finely chop bell pepper, broccoli and cauliflower.

scramble eggs in a medium bowl.

add salsa, cheese and chopped veggies.

mix well and scoop into well-greased muffin tin. (2 large spoonfuls is 12 muffins)

bake for 30 minutes.

enjoy warm or cool!

    86 calories a muffin

    3-4 grams fat and carbs
    6 grams protein

    Looks pretty expandable. You could put any veggies in there you wanted.

    most veggies work fine so long as you cut them small. steamed asparagus is very good in these. you can also replace the cheese with cottage cheese if you prefer.

    They do look yummy! Will they keep for a couple of days? I'm thinking if I made them on Sunday, they would be a nice warm-up breakfast for the rest of the week. Thanks for posting this!

    I was thinking about doing something like this and freezing them, do you think that would work? Also, I wanted to add some brown rice to get some whole grain into it and have a little of everything for breakfast.

    I make something like this all the time! It's a great time saver to make it once a week and be able to have quick eggs in the morning. They keep fine in the fridge for the week.

    Usually I use 4 eggs and 4-6 egg whites. And I always use spinach, sometimes mushrooms, peppers, onions, turkey sausage or canadian bacon and I only use 1/2 cup of shredded cheese on top.
