1/2 can pumpkin puree
1 cup almond milk
pumpkin pie spice, to taste

I take a standard pumpkin pie recipe, use splenda rather than sugar and fat free condensed milk, pour into a pie pan without a crust, bake per directions and have "pumpkin souffle" (don't eat pie crusts on pies, except apple, so why waste the time/$ on one? Also, no worries about the crust getting soggy after a day or so)
I also use my mother's pumpkin pie recipe, substitute Splenda for the sugar, 1% milk for the whole milk hers calls for and pour the mixture into glass custard cups. After I bake it, I put plastic wrap on all the little pumpkin custards and store them in the refrigerator. I have the best evening snack ever with a bit of Cool Whip Lite.0 -
Simple recipes. Roast veg including pumpkin seasoned with fresh roasemary. Other veg i cook are carrot sweet potato mushroom and eggplant. See jaimie olivers website if u dont know how to cook this.
Roast pumpkin tossed in lettuce with feta cheese and walnuts or pine nuts. Add whatever salad items u wish esp green ones. For some reson i hace never seen aussies include tomato in this dish. Can omit nuts if u are worried about their calories.0 -

I found a fairly simple pumpkin muffin recipe and it's only about 100 calories per muffin, the webiste said more like 97 or 98 but it depends on the number of muffins you make per batch and the type of cake batter you use. You use a box of cake mix, the recipe called for yellow but I prefer to use a spice cake mix to give it a better flavor, and one 15 oz. can of pure pumpkin. Mix together (Note: that this a very thick batter, but think of the calories you can lose by mixing by hand :happy: )and bake at the required temp for the cake mix. I added a little vanilla and some cinnamon to mine and I think in the next back I'm going to add crushed pumpkin seeds to the top as a crust, kind of like the pumpkin bread at starbucks.
These are delicious! Works good w/ devil's food cake mix, too.0 -

Chocolate Pumpkin Muffins
1 20oz can of pumpkin (or 20 oz of pureed pumpkin...blenders are wonderful for that)
I box of cake mix
1/4 cup milk if needed.
Follow the baking directions on the cake mix
no oil, no eggs. Simple...Healthy-ish
I do this but don't add the milk and I usually use a spice cake mix. I usually make it in a loaf pan!! Yummy0 -

Pumpkin Spice Frappe
Prep Time: 3 minutes
Total Time: 3 minutes
Yield: 2 Heaping Cups
Serving Size: 2 Heaping Cups
frozen blended coffee drink that is creamy, sweet and tastes just like pumpkin pie.
Ingredients
1. 1 1/2 cups coffee, frozen, partially thawed
2. 2 Tbsp. pumpkin, canned
3. 1/2 tsp. vanilla extract
4. 1/4 tsp. pumpkin spice, ground
5. 1 tsp. stevia
6. 1/2 cup unsweetened coconut milk
7. 2 tbsp. whip cream, fat free
8. 1 dash cinnamon, ground
Instructions
1. In a blender add coffee, pumpkin, vanilla, pumpkin spice, stevia and coconut milk. Blend until smooth.
2. Pour into a glass and top with whip cream and sprinkle of cinnamon.
Notes
Calories for the whole thing including whip cream: 45.6, Fat: 2.6, Cholesterol: 0, Sodium: 8,9, Potassium: 35.6, Carbs: 3.9, Fiber: 1.2, Sugar: 2.2, Protein: 1.1
sounds yummy, but I'd have to sub. the coconut milk, I'm allergic to coconuts.0 -
Pumpkin Pie protein shake:
1/2c pureed pumpkin
1c almond milk
1 scoop vanilla protein powder
a couple dashes each of cloves, cinnamon, all spice and nutmeg
half a banana
Blend.

Pumpkin soup. Remove seeds, boil the whole thing skin and all (chopped up ofcourse , whizz it to a purée, add a pinch of spices of your choice and enjoy!0

I make pumpkin yogurt every morning for breakie
equal pumpkin and greek yogurt, pumpkin spice, cinnamon, nutmeg and some honey.
If you google pumpkin pie yogurt you will get a bunch of recipes for it.

^I use light butter/margarine and 1% evaporated milk and I make it in 12 muffin tins (with foil liners) and they come out to be about 110 cals a piece. You can even use skim or almond milk and they still come out yummy and less than 100 cals a piece.
Also, the pumpkin puree + spice cake muffins are amazing! I add an egg white and about 2 tbsp of water just to make the batter a little easier to mix. I usually add about 1.5 tsp of pumpkin pie spice too.0 -

I make the fluff too but I use SF/FF cheesecake pudding instead of vanilla (and I do add skim milk, HALF the amount called for to make pudding, so it's thicker) and add a little pumpkin pie spice to it for some more flavor. Very good!0 -
I was craving pumpkin last night but wanted to be healthy so I came up with this.
1 cup Chobani plain yogurt
1/8 cup canned pumpkin (more or less to suit your taste)
1 tsp agave nectar
Several good shakes of pumpkin pie spice
Mix well. I added some granola and crumbled graham crackers to mine. Super yummy, my kids asked me to make some more today!0 -
Pumpkin is super healthy! This soup recipe is delicious and my whole family loved it. It takes a little work to peel the pumpkin, but it's well worth it.
Pumpkin Soup
2TBSP Olive Oil
2 med onions, chopped
2 cloves garlic, chopped
2 lb pumpkin, peeled and cut into 1 inch chunks (I used a 2.5lb "Sweet Pie" pumpkin.)
6 1/4 cups low sodium chicken broth
Finely grated rind and juice of 1 lrg orange
3 TBSP fresh thyme
3/4 Cup milk
salt and pepper to taste
Heat Oil, sauté onions for 3-4min, add garlic and pumpkin, sauté 2 min.
Add stock, orange rind, juice and thyme, simmer until pumpkin is soft.
Blend mixture (or mash with potato masher, until smooth), add milk, salt and pepper.
It serves 4 BIG servings and is about 175 cal per serving.

I've experimented with making 'healthy' pumpkin bread and muffins, but haven't really perfected it yet.
I also like to make pumpkin pancakes this time of year. The quickest way is just to use a boxed mix (I like Heart Smart Bisquick) and add about 1/2 cup of canned pumpkin and about a tablespoon of pumpkin pie spice and a bit of cinnamon. However, I stumbled across a super-skinny pancake recipe on our very own forums the other day that is a little complex (read: you need a mixer), but worth it if you've got the time:
3/4 c. all-purpose flour
1/2 tsp salt
3/4 c. milk (or milk substitute)
2 egg whites (or 1/3 cup if you're using the ones in a carton)
1/2 c. canned pumpkin
2 tsp baking powder
1-2 tsp pumpkin pie spice, to taste
1/2-1 tsp cinnamon, to taste
Directions
1. Sprinkle dash of salt on egg whites and beat until stiff, but not dry.
2. Add milk to flour and salt. Beat until smooth.
3. Add baking powder and beat a few seconds more
4. Fold in beaten egg whites.
5. Pour into the pan and turn once. Should be golden brown.
The original recipe comes out to be 26-30 calories per pancake, but the pumpkin adds about 50 calories to the recipe, which yields about 8-10 1/4 cup sized pancakes. They're great with some fried apples (sauteed with cooking spray- don't panic), sugar free syrup, and toasted pecans!0 -

My mom makes this simple soup that never fails to make me drool.
She cooks pumpkin, carrots, chicken breast and herbs to make a very creamy soup.
Then adds either:
slivered almonds or coconut milk or both.
Y-U-M-M-Y!!!

SkinnyTaste.com has a great pumpkin cupcake recipe w/ homemade cream cheese icing. I thought they were very good! However, I suck at making homemade icing so my second batch, I bought premade icing.
OMG, those cupcakes were to die for!! made them last year0
