Mexican Lasagna (crock-pot)

This is sooooo good! My mom made it the other night and now its cooking in my kitchen right now :smile: , I added chicken so we'll see how that works but either way its really good....

1 head cauliflower (cored)
3 plum tomatoes
1 can black beans (15.5 oz)
1 cup frozen corn
1/3 cup chopped cilantro
2 tsp chili powder
2 tsp ground cumin
3 1/2 cup monterey jack cheese
1 jar (16 oz) green salsa
6 tortillas

-Cut cauliflower and tomatoes. Place cauliflower, tomatoes, beans, corn, and cilantrol in bowl. Sprinkle with chili powder and cumin (I just mixed it all together, not sure what my mom did...)
-Spread 3 cups or so of the mixture into the bottom of the crock-pot.
-Sprinkle 1 cup of the cheese and 1/2 cup salsa over top.
-Place 2 tortilla on top.
-Repeat layers 2 or more times.
-Cut last 2 tortillas into 2 inch pieces and scatter on top.
-Sprinkle with cheese after its cooked if wanted and cook 30 minutes or until its melted.

Prep time: 15 min
Cook time: 3 1/2 hours on high or 6 hours on low
Serves: 8
Calories: 376 per serving (I don't know the rest of the nutritional info cause I didn't write it all down)

    Um not sure... I would think about 1 1/2 cup, I'm just going to try to look at it and divide it in 8! :smile:

    You probably wouldn't miss it but I think it adds "bulk" to the recipe, maybe try a different veggie and you'd be surprised cause the cauliflower is good, I thought it was so random but it works!... and the chicken was GREAT! I just chunked up raw chicken without any extra seasoning and it worked out perfect.

    I made this last nite - only without the beans and I added a pound of ground chicken that I browned on the stove with half a packet of low sodium taco seasoning. I must say, it was pretty good. I knew my boyfriend would eat it, but I'm a picky veggie person and chunks of tomato and cauliflower are typically turnoffs for me, but the flavors from the spices all blended together enough that even I thought it was good. And as a side note - I don't know if you guys have huge crockpots or mine's just tiny.. but I only used 3 tortillas and with all the ingredients my crock was full to within about 1.5 inches from the top.

    Alright - mine's in the crock pot now. I added ground beef with taco seasoning and a layer of spinach. I do not know if this is a good idea or not. Somehow, taco meat, cauliflower and spinach in the same bite seems a little sketch. I will report back.

    Wow - it was great! I was suspicious, but unnecessarily so. Turns out, the cauliflower adds an important flavor and I don't think the dish would be the same without it. The only reason I added the ground beef was b/c the other person eating it isn't so hot on "meatless" meals. Served with "Frank's Hot Sauce" and a dollop of sour cream. It got an "A+" review from my food snob friend.
