Chicken and mushroom omelette is a good fallback in my house, 5 mins and you have a good protein rich meal.
I do really love just having chicken with a little salad cream as a dip so that's my normal choice but you could make a quickie pizza using a wholewheat wrap, some tomato sauce and veg,the chicken and a little cheese, then pop it under the grill.0 -
shred it up and use it in anything, tacos, enchiladas, wraps, bbq, sandwiches.. be creative!0

I have a recipe for mac n cheese where instead of just cheese you use a salsa and then mix in the chicken. I think it's called "mac cheese chicken", and I use the rotisserie chicken for that. It's yummy!0

I would start with chicken fajitas. Second day maybe some chicken salad wraps. Third day I'd stick the carcass in a pot of water with some carrots, onions, turnips, seasoning, and some chicken broth and turn it into an epic soup.0

I just bought one the other day, chopped it up (minus the skin) and made some chicken salad with it. I take plain Greek yogurt, onion poppyseed dressing, chopped almonds, sliced grapes. salt and pepper and mix together. My husband eats as a sandwich and I eat over lettuce. I also love to turn a rotisserie chicken into soup as well.0
