What to do with a rotisserie chicken???

So I have a rotisserie chicken and wanted to do something besides just eat the plain chicken and have a salad, etc....

Any ideas?????

  • after you eat what you want, boil it off the bone and then make chicken and dumplings. there is a low cal recipe on spark people, that is pretty good...

    Chicken tacos! Or mix it into a marinara sauce and serve over pasta or squash.

    Chicken and mushroom omelette is a good fallback in my house, 5 mins and you have a good protein rich meal.

    I do really love just having chicken with a little salad cream as a dip so that's my normal choice but you could make a quickie pizza using a wholewheat wrap, some tomato sauce and veg,the chicken and a little cheese, then pop it under the grill.

    shred it up and use it in anything, tacos, enchiladas, wraps, bbq, sandwiches.. be creative!

    I cannot remember the site I read it on, but if you search for 'a week of meals with a rotisserie chicken' it will give you a lot of great recipes.

    I remove all the meat, cut it up and make a chicken pot pie.

  • I love eating chicken with salsa on it! So good, and salsa is super low calorie so it adds nutrients and flavor without adding a lot of calories.

    I take 30z of the chicken with salsa and 1/2 cup of black beans with a little diced fresh tomato I eat it both cold and hot

    Eat some plain with delicious side dishes tonight, pick the easy-to-get stuff off the bones and use it in chicken tacos, boil the rest off to use in soup/stews.

    I have a recipe for mac n cheese where instead of just cheese you use a salsa and then mix in the chicken. I think it's called "mac cheese chicken", and I use the rotisserie chicken for that. It's yummy!

    SOUP. :) I looove soup. Have it on a sandwich roll. Chicken salad. Chicken wraps. Chicken burritos 8)
  • Shred it with Red Hot and hidden valley ranch packet for buffalo chicken ....use in a wrap, or a lettuce wrap even lower in cals.
    Can shred also for chicken salad with low fat mayo, celery cranberries onions ,....etc.

    Save the bones in your freezer, and make chicken stock when you have a couple carcasses in there.

    I would start with chicken fajitas. Second day maybe some chicken salad wraps. Third day I'd stick the carcass in a pot of water with some carrots, onions, turnips, seasoning, and some chicken broth and turn it into an epic soup.

    last night i made chicken salad (not with rotisserie chicken but it's still chicken). grey poupon with horseradish instead of mayo, capers and reduced fat crumbled feta and it was quite tasty. so if you have chicken left over try this.
  • I just bought one the other day, chopped it up (minus the skin) and made some chicken salad with it. I take plain Greek yogurt, onion poppyseed dressing, chopped almonds, sliced grapes. salt and pepper and mix together. My husband eats as a sandwich and I eat over lettuce. I also love to turn a rotisserie chicken into soup as well.

    I made Thanksgiving Casserole with leftover roast chicken last night.

    Thanksgiving Casserole

    Serves 6

    Ingredients:
    1 (6 oz) package stuffing mix
    2-3 cups cubed cooked turkey or chicken
    8oz fresh mushrooms, stemmed and quartered
    small onion, diced
    2 cups frozen green beans, thawed
    1 (12 oz) jar or (10.5 oz) can of turkey gravy
    1 (10.5 oz) can cream of mushroom soup
    1 small (2.8oz) can of French’s French fried onions


    Directions:

    Coat 9x13” pan with tin foil or spray with non-stick.

    Prepare stuffing as directed on package and layer on the bottom of the pan.

    Saute mushroom and onion

    In bowl, mix poultry, gravy and soup. Add cooked veg and season with pepper. Pour over stuffing.

    Top with green beans and fried onions.

    Bake at 350 F for 20-30 minutes or until bubbly.
