Jalapeno Cornbread

I was just given a recipe for Jalapeno Cornbread -- the perfect combo of sugar and spice (literally).

ALSO, if you're a vegetarian (like myself) I posted some ingredient substitutions to make the recipe vegetarian-friendly and a bit healthier! :flowerforyou:

    Calorie-wise it's not so bad. only 84 calories per serving! See original post for nutrition info update.

    do you mix in the jalapenos and bake them?? Or do you sprinkle them on top when it comes out of the oven?

    This is something I recently discovered, and was dismayed by - Jiffy products have animal shortening, like lard, in them. At least the basic muffin mixes I've seen, do. Just FYI for vegetarians who are on the lookout for that stuff. I'm not vegetarian, but don't like to consume lard, so I was highly disappointed to have to give away my Jiffy products. :sad:

    Yikes. Thanks for posting this. I would have checked the ingredients before buying but it is nice to know this now so I can look for an alternative. I am a vegetarian and always have to be careful since so many things have lard that seem vegetarian.
  • There are 150 calories per 6 servings just what is in the box, not including the milk, eggs, etc. I think you need to refigure your data.

    Yes, something is way off with your nutritional facts. I just tried to input it and used your substitutions as well as reduced fat cheddar.

    This is what I came up with:

    Servings: 12
    Per Muffin:

    Calories: 218
    Carbs: 36g
    Fat: 5g
    Protein: 4g
    Sugar: 9g
    Sodium 528

    you mix them in with the batter and bake them in the bread.
