What to do with pumpkin?

I have two pumpkins (one rather large and one small one). Looking for some ways to enjoy it.

I already know about the seeds, but I would like some other ways to enjoy it. The only way I've got at hand is to cook it down to mush (about the consistency of canned pumpkin) for pumpkin bread.

    I always recycle our Jack-O-Lanterns.

    Although small pumpkins are recommended for pie puree because they're sweeter, you can roast both large and small in the oven. Cut in halves or quarters, poke a few holes in the skin, lie them face down on a cookie sheet or roasting pan (I prefer the roasting pan as most pumpkins are very watery and could spill over a cookie sheet), and bake at 400 degress until soft. Skin should peel right off. Puree pulp in a blender or use a handheld immulsifier. Put in freezer bags and toss in your freezer until ready to make pies, muffins, etc.

    if you must use a Jack O’ Lantern type pumpkin, let the pumpkin pulp sit in the fridge for a few hours. The water will separate and can be poured off. Or, just toss the pulp into a colander atop a pot and let it drain overnight.

    You can also leave pumpkin pieces out for the birds and other animals, or use as compost for your garden if you have a composter.

    Not sure what kind of pumpkins I have. But might send some whole slices to the neighbors.

    I made puree and have been using it in all sorts of recipes--mini pumpkin pancake poppers for my daughter, pumpkin oatmeal, and this morning I had a pumpkin smoothie for breakfast. The process can be a little tedious but the rewards are tasty!
  • personally I love roasted pumpkin with my dinner, or mashed, combine with 1 potato for a better consistency, and because it is quite moist, I don't add milk or butter - bonus!

  • Bump for later.... I have two small pumpkins and one medium sized pumpkin I would love to make into something and store some for later.
