I made a huge pot of this and OMG so good!! It's so hearty for the fall weather and guilt free with being only 99 caloires for 1 cup! I used whole grain flour and fat free hald and half to make it creamy instead of heavy cream...so much healthier.
4 cups chicken broth
4 cups water
4 chicken cubes
1 can sweet peas
2 cups green beans
2 cups chopped carrots
2 cups chopped celery
1 large onion diced
2 cups chopped cabbage
4 cups cooked shredded chicken breast
1.25 cups fat free half and half (could use skim milk too)
1 cup whole wheat flour (could use white flour if needing gluten free)
3 cups whole grain brown rice
Seasoning:
1 tablespoon garlic powder
1 tablespoon parsley
1/2 tablespoon ginger
1 tablespoon cumin
1 tablespoon onion powder
salt and pepper
Directions:
Put all the ingredientsa along with seasoing except the flour, half and half, and rice. Let cook on medium for about 15-20 minutes. Then whisk together flour and half and half. Add rice and cream mixture to pot and simmer about another 15 minutes.

Bump! Sounds delicious! BUT white flour is NOT gluten free. Rice flour is or you could use cornstarch. I'm totally going to try this.... Probably this week!0
