    Turkey (brined and slow roasted)
    Wild mushroom dressing
    Giblet gravy (made with homemade turkey stock)
    Collard Greens
    Mashed potatoes
    Fresh cranberry relish
    Green beans + bacon + sun dried tomatoes + pine nuts
    Slow roasted tomatoes (cook em in olive oil till they fall apart, spread on bread)
    Pumpkin pie
    And some arugula salad (mostly just for me. No one else eats it)

    OH and I always do sweet potato + turkey + sage meatballs for an app

    we have Thanksgiving on Sunday after the real holiday since hubby works till then. Kids and I will be serving food at our local free dinner to the poor.

    We are taking our holiday approach different this year. Our menu consists of:

    Roast Beef
    Brown Rice (my newest addiction)
    Sweet Potato Brulee
    Roasted Green Beans or some kind of carrots
    Cranberry Pear sauce
    and for dessert, my first time ever making this
    Pumpkin Roll and it's a light version

    I think that is pretty much it.

    Green beans (maybe with some turkey bacon in them)

    I will be counting calories on Thanksgiving since it's just us and we'll be home.

    My hubby will likely work, He works most holidays and pre being selfemployed so did I :) Leftovers heat up nicely

    I think that's all for now. It will just be my husband and myself, so I will have a lot of leftovers. I will take half of the cake to my parents when I visit them in their independent/assisted living facility. They don't really have a kitchen because all their meals are served there for them.

    That's all I know about sure am dreading this day at the table will have a plate in
    total moderation and hope the wife my 3 daughters their husbands and my 11

    We don't do a massive dinner...just a couple of people, so its just this:

    - turkey/stuffing
    - mashed Potatoes & gravy
    - cvorn
    - some green veggie..not sure what yet
    and maybe some rolls...

    and for dessert, this 'pumpkin crunch' thing that's like pumpkin pie, but WAY better.


    Pumpkin Crunch:

    29 oz can pumpkin
    12 oz can evaporated milk
    3 eggs
    1 cup sugar
    1 Tablespoon Pumpkin pie spice
    1 teaspoon salt
    1-2 cups pecans, chopped
    1 box yellow cake mix
    2 sticks of butter

    Preheat oven to 350. Mix pumpkin, milk, eggs, sugar, pumpkin pie spice and salt in a large bowl until well blended. Pour into greased 9 x 13 pan. sprinkle cake mix over top. Then sprinkle with chopped pecans. Melt butter and pour over top. Bake for 50-60 minutes

    i always make one new item each year whether it's a dessert or a side just depends on what i find online or on the food network that catches my eye, i mean stomach.
