    I think that's all for now. It will just be my husband and myself, so I will have a lot of leftovers. I will take half of the cake to my parents when I visit them in their independent/assisted living facility. They don't really have a kitchen because all their meals are served there for them.

    We don't do a massive dinner...just a couple of people, so its just this:

    - turkey/stuffing
    - mashed Potatoes & gravy
    - cvorn
    - some green veggie..not sure what yet
    and maybe some rolls...

    and for dessert, this 'pumpkin crunch' thing that's like pumpkin pie, but WAY better.


    Pumpkin Crunch:

    29 oz can pumpkin
    12 oz can evaporated milk
    3 eggs
    1 cup sugar
    1 Tablespoon Pumpkin pie spice
    1 teaspoon salt
    1-2 cups pecans, chopped
    1 box yellow cake mix
    2 sticks of butter

    Preheat oven to 350. Mix pumpkin, milk, eggs, sugar, pumpkin pie spice and salt in a large bowl until well blended. Pour into greased 9 x 13 pan. sprinkle cake mix over top. Then sprinkle with chopped pecans. Melt butter and pour over top. Bake for 50-60 minutes

    i always make one new item each year whether it's a dessert or a side just depends on what i find online or on the food network that catches my eye, i mean stomach.

    Main course - turkey, 2 kinds of stuffing, garlic mashed potatoes, hot dinner rolls, butter, green been casserole, butter, sweet potatoes and rutabaga and butter, salad, hot dinner rolls and BUTTER

    pumpkin pie and french silk pie for dessert

    God I can't wait!!!!!!!!

    We are doing Thanksgiving next Tuesday. Mom has chemo Thanksgiving week so we want to be sure she can enjoy all the food. I will not be logging or really caring about what I eat that day. It's about spending time with my mom and my family and just enjoying ourselves. Nothing else. I mean, this could be my last Thanksgiving with my mom so... yea. Much more important things going on then counting calories.

    So our day will look like:

    Breakfast
    Cinnamon rolls and coffee/hot chocolate

    Appetizers
    Veggies and Dig
    Mixed Nuts
    Cheese and Crackers
    Chips and Dip

    Dinner
    Roasted Turkey
    Family Stuffing
    Cornbread Dressing
    Buttermilk and Chive Mashed Potatoes
    Green Bean Casserole
    Cranberry Sauce

    Gravy

    Dessert
    Pumpkin Pie with Whipped Cream

    Wine and Beer will be available all day =)

    We have no family here in CT, so I don't have to cook... We have been going out to an iconic New England inn for traditional turkey and fixings dinner. We're trying a new restaurant this year at the Seaport, so our menu, in addition to turkey, will include lobster bisque and shrimp!

    Fresh turkey (brined Wed. evening, and roasted in the oven Thurs. morning)
    Crock pot cornbread dressing (easy and very moist)
    Fresh ham (baked in the oven or on the grill)
    Green Salad
    Broccoli Rice Casserole
    Fruit Salad
    Mashed Potatoes
    Dinner rolls
    Pumpkin Cake
    Pecan Pie
    Iced Tea
    Wine

    Mom may bring a corn casserole, too. Sometimes the kids bring something special to add. No one leaves hungry!

    Just me and the husband this year. We won't be around for too many leftovers. And I've never cooked a full Thanksgiving meal before... SO...

    Turkey tenderloin
    Corn
    Peas
    Cranberry sauce
    Potatoes of some kind (sweet potato or maybe I'll try a twice-baked recipe)
    Wheat rolls
    Possibly jello with fruit in it if I can find gelatin free jello
    Probably NOT stuffing.

    Wow, that looks kind of sad. But practical! :)
  • Whatever my wife fixes. I am sure there will be Turkey, mashed potatoes, green bean casserole, but in the end although the food will be delicious it is the time I have with her and my son that make it truly a day to be Thankful for.

    We end up going to an Irish Thanksgiving Buffet at a restaurant, no dish clean up or tons of leftovers ;)

    Several of us at work will be walking/running a 5K on Thanksgiving Morning So....I will not feel guity about:

    Turkey
    Homemade Dressing
    Mashed Potatoes
    Gravy
    Green Beans
    Rolls
    Impossible pumpkin pie--from Bisquick--it's the BEST pumpkin pie you will EVER have!!

    We will be leaving town the next morning and my Husband has to work on Thanksgiving Day, (life of a cop, duty never ends) so me and my daughter may just skip Thanksgiving and head to TGIF!! Who knows! Maybe we'll end up at Denny's!!

    We go to a friend's home for the meal and take along our "specialties" These will sound weird but.....I make homemade Chicken & Noodles (not dumpling!!!) and hubby makes Steak & Kidney pie. Our host usually makes 20-25 pies and of course has all the trimmings.

    I will be exercising a lot that week and that morning in anticipation. I don't plan to pig out but I also won't be taking home any leftovers. I just plan on enjoying the day with great friends!!
